PREVENTING CROP WASTE AND EXTENDED THE SHELF LIFE OF MICROGREENS AND SPROUTS
To prevent crop waste and extend the shelf life of microgreens. Yeshurun Farms converts microgreens to dried herbs which maintains their nutrient density and turns them into a accessory food.
WHAT ARE MICROGREENS?
Microgreens are simply 10 -14 days old, regular vegetables. At this stage, they contain large amounts of stored nutrients, designed to help the plant get to a point where it starts making more by putting down big roots and developing leaves. The process is one I describe as when a baby is born they do not grow more fingers just the finger they have to grow larger and its the same with a plant it has all it needs, it just disperse more throughout the plant, meaning you need to eat more the older it gets. Who wants to eat a huge head of broccoli when a small handful of micros will be more than sufficient. Broccoli microgreens are known to contain up to 400 times the nutritional benefits of their adult counterpart.

THE PROCESS
Our microgreens are grown 100% hydroponically. All growing equipment is washed and sprayed with a 3% hydrogen peroxide solution to kill any pathogens. Our reservoir water is tap water that is treated with Vitamin C to remove the chlorine, infused with Ocean Solution and 1% hydrogen peroxide. We remove the moisture from these delicious vegetables. The microgreens are then ground into a powder and condition test to make sure all the moisture has been removed. They are then bottled and stored in cool place until sold.
HOW
By not adding anything to our microgreens, you are receiving 100% natural flavors, with the microgreens remaining almost 100% nutrient dense in tact except they may have reduced levels of vitamin C and A due to the dehydration process. The health benefits we provide is a priceless one!

WHAT ARE SPROUTS
Sprouts are the germinated seed of a vegetable, young plants on their way to full growth – at least until some are harvested from those plants to be, well, sprouts for eating. You can find sprouts pretty much wherever you find food, particularly grocery stores and farmers markets. Some people even grow their own.
How we grow our sprouts.
Yeshurun Farm grows sprouts completely in an indoor hydroponic environment. This eliminates exposure to domestic or wild animal waste and contamination. We do not use soil to grow our sprouts, eliminating any soil based pathogens. Sprouting seeds are soaked in a 3% hydrogen peroxide solution between 4 and 12 hours depending upon the seed type. This thins the seed casing and will destroy any pathogens that maybe present on the seeds themselves, while at the same time improves oxygen exchange in the seeds which helps in germination and destroys any bacteria. We use tap water, to rinse our sprouts, this eliminates our water as being a source for any water born pathogens. All growing jars, screens and trays are washed and then sprayed with a 3% peroxide solution to kill any pathogens that may be introduced onto those surfaces. Sprouts are grown for 5 days and allowed to dry out on the sixth day. Employees wash their hands before and after handling seeds or equipment used in the sprouting process. This reduces or eliminates chances of pathogens being introduced through handling. Sprouts are dried out for 12 – 24 hours prior to harvesting if they are going to be sold as sprouts at the Farmers Market they are immediately refrigerated to keep them cool below 40 degrees Fahrenheit if they are being grown for use to be dehydrated and turned into a powder, they are immediately put into the dehydrator at 140 degree for 4.5 hours. They are conditioned for 12 hours to ensure there is no moisture present. If moisture is detected, they are placed in the dehydrator again at 125 degrees for 3 hours to ensure any remaining moisture is removed. The dehydrated sprouts and or dehydrated microgreens are then ground into a powder and bottled for sale.
Spouts and Microgreens not sold at market are dehydrated and turned into food accessories. Dehydrated sprouts and microgreens remain more nutrient dense than their grown counterparts and have a longer shelf life than fresh microgreens and sprouts.
